Are stainless steel pots really rust-free?

Stainless steel pots are indeed resistant to rust, thanks to the addition of a certain amount of chromium alloy elements. This alloy allows the formation of a robust oxide film (passivation film) on the surface of the steel, isolating the stainless steel pot from external elements and preventing chemical reactions. In such steel, some variants not only contain a significant amount of chromium (Cr) but also incorporate additional alloy elements such as nickel (Ni). This composition provides excellent chemical stability in the presence of air, water, and vapor. Moreover, it exhibits sufficient stability in various aqueous solutions of acids, alkalis, and salts, even in high or low-temperature environments, maintaining its corrosion resistance.

The commonly used material for pots is 304 food-grade stainless steel. 304 stainless steel consists of 18% chromium and 8% nickel, known as 18-8 stainless steel in JIS coding. The term “304 stainless steel” is derived from its chromium-nickel ratio. Another stainless steel variant used in some pots is 316 stainless steel, containing 18% chromium and 10% nickel. This type of stainless steel is known for its increased durability and corrosion resistance, making it less prone to rust, even in environments where 304 stainless steel might show signs of corrosion.

Stainless steel utensils are not only aesthetically pleasing but also durable. However, it’s crucial to be aware of potential safety issues with substandard stainless steel pots. Inadequate stainless steel pots may release certain compounds during use, posing health risks upon repeated ingestion. Commonly, substandard stainless steel pots may exceed the permissible limits for chromium content.

When purchasing stainless steel pots, it’s important to consider both the material composition and the intended usage scenario to maintain the stability of the pots. While stainless steel is not completely immune to rust, long-term exposure to acidic or alkaline substances may induce chemical reactions, causing trace elements to leach out. Therefore, stainless steel utensils should not be used for prolonged storage of salt, soy sauce, pickled dishes, etc. Additionally, it is advised to avoid using strong alkaline or oxidizing chemical agents, such as soda, bleach, sodium hypochlorite, etc., to clean stainless steel utensils to prevent corrosion.
